Update on the saving plan

I decided to let the diet Coke go until May. But I started the vegie hot dogs vs chickpeas thing right away. Last night I soaked a full kilo of dry chickpeas, and early this morning (yeah, I need to see my sleep psychologist) I put them in the crockpot. They are now fully cooked, and sitting on the kitchen bench in their cleaned-out takeaway containers, waiting to cool down so they can go in the fridge. Unfortunately, one cup of chickpeas has three times the carb content of one serve of two hot dogs. I will have to deal with that. They’re much lower in sodium, which would be great if I were monitoring my sodim intake.

I have visions of hoummus dancing in my head.

Mmmmm, chickpeas. :D And yes, carbs, BUT! They also have protein, zinc, folate, lots of fiber, and they're low in fat! \o/

I need to find a good recipe for hummus. I love that stuff, but I really should learn to make it myself instead of buying it.

Do you eat eggs? Cause if you do, you can boost the protein by mushing up your chickpeas and adding eggs and spices and shaping them into patties. Cook em, freeze em and all you have to do is reheat when you get home!

Seconding the eggs. I also use coconut milk in various things involving chickpeas. (But well, I function best with added fat; otherwise, my brain goes offline.)

Carbs, but a low glycemic index and low glycemic load.

May I mention that they go wonderfully with berbere?

Good idea, split up the going-withouts. And the crockpot is a great way to save money too.

Good luck! Hopefully you'll be able to break up the chickpeas with something else and not get tired of them. :P

Also, my fave hummus recipe is this one, which is awesome...er...if you like garlic. ;P

Not chickpeas, but these lentil snacks: http://redfox.typepad.com/hungry/2005/05/lentil-snacks.html might also be a nice option? (They are *incredibly* tasty.)
